Bonnie's Homemade Burgers
500g ground beef
1 egg
1 clove garlic or garlic powder
1 tsp grated parmesan cheese
1/2 tsp basil
salt & pepper
500g ground beef
1 egg
1 clove garlic or garlic powder
1 tsp grated parmesan cheese
1/2 tsp basil
salt & pepper
In a bowl add garlic, parmesan, salt and pepper to ground beef. In another bowl beat egg with a fork add it to the ground beef. The egg is just to keep the burger from crumbling so don't overdo it on the egg. Separate the beef into four. Shape into patties. I find it cooks best if you squish em down a bit so that they are a little bit more than half an inch thick. Cook in frying pan until they are brown and there is no pink inside. When they are done serve with your favorite toppings! My favorite way to eat them is on an english muffin with baby greens or spinach with cheddar cheese and ranch dressing and parmesan.
Makes 4 servingsYam Fries
2 lg. unpeeled sweet potatoes or yams(about 2 lbs.)
1 tbsp. olive oil
salt & pepper to taste
dash of rosemary
1 tbsp. olive oil
salt & pepper to taste
dash of rosemary
Scrub yams; cut each into thin (4 x 1/4 x 1/4 inch) strips. Combine oil and seasonings in a large bowl, stir. Add yams and toss well. Arrange in single layer on baking sheet coated with cooking spray. Bake at 425 degrees for 25 minutes, turning every 15 minutes. Serve as is or with sour cream! Yum!
Crispy Yam Fries:
Thanx for the recipe Lauren!
Chop potatoes into wedges.
Boil in salted water for about 10-12 minutes.
Drain water from the potatoes.
Place on a shallow baking tray with lots of olive oil (don't use extra virgin, it will smoke) and toss them around in the oil until completely coated. Canola oil also works.
Put it in the oven at 425-450ºF.
Periodically toss them around as they bake, scoop and flip with the implement of your choice.
The minute they are almost done, jack the temperature up to 500 degrees--seriously--and cook for just a few more minutes. Watch carefully! This gives them extra crispiness--so good! A trick from a famous San Fran chef.
Makes 4 servings.

That's for potato fries, but it'll probably work for yams too. Also, it sounds yummy!
